End your week with a bang by indulging in a luxurious brunch at VBC between the hours of 11:30 am and 3.00 pm, where you may dine al fresco while taking in the breathtaking scenery of the Zambales mountain ranges while sipping free-flowing champagne and enjoying the variety of carefully crafted menu selections.

I attended the opening of the Verona Brunch Club at the Swissôtel Clark with a group of fellow culinary and travel writers and was immediately impressed by the assortment of balanced yet sumptuous entrees and main courses offered.

To calm my ravenous appetite, I began with a few choices from the Danish bread aisle and then moved on to "light" appetizers like beef carpaccio crepe with arugula, pine nuts, crispy parmesan cheese, plus bruschetta with bottarga, shrimp salad, and mushroom soup on the side.

Freshly made pizza, green pea soup, cold meats, and varied cheese were among the first courses enjoyed by my fellow writers at the other table. Another food writer tried out the oyster bar that serves the chewy and savory crustacean in three ways: Rockefeller, fresh and baked cheese.

Verona Brunch Club does not offer a traditional buffet service but rather allows diners to order from a full menu, ensuring that all food is prepared and served promptly straight from the kitchen.

Having finished the pastries and appetizers, I dove into the "heavier" dishes on the menu, such as the pan-seared salmon fillet, beef tenderloin with red wine reduction sauce, wagyu double beef burger, porchetta, and cod fish.

By the time one of the waiters asked me what I want for dessert, I hardly had any space in my belly. Still, I'm not the kind to turn down some sweets, so after my brunch I indulged in a glass of champagne and a few delicious desserts, including a Candied Banana Mille Fruille, a Swiss Chocolate Cheese Cake, and a Mascarpone Cheese Cake.

As I simmer down from the feast of a brunch I just had, I looked around me and saw most of my fellow diners are composed of groups of friends and families and a few tables engaging in sort of business meeting. The concept of "brunch" dawned on me as a wonderful excuse to get people together around a table to enjoy great food without having to wake up so early or getting up too late in the morning.

The Swissôtel Clark, the newest attraction in northern Metro Manila, held its soft opening on March 1, 2022, and it features 372 guest rooms and suites in addition to 10 different dining options.
